Do I need the 32-bit or 64-bit version?

This depend on whether your hosting software is 32-bit or 64-bit. If you are on Windows 32-bit, then your hosting software is also 32-bit. If you are on Windows 64-bit or Mac OS X, then your hosting software can be either 32-bit or 64-bit. When in doubt, first try the 32-bit version.

I see the organ with the keyboard below it, but where is the settings window with all the sliders?

In the left bottom corner you will find a couple of small buttons. The left button is labelled Settings, and when you left-click it the settings window will "magically" appear.
